Battle of the Borders

Living in Saddleworth, we are often caught up in a good old ‘Lancashire, Yorkshire’ debate. So we had the super idea of celebrating food from both counties, with the winners of each course being the county where the most dishes are ordered. The overall winner will be announced at the end of the evening. You may be in for a few themed surprises along the way!
Classic inspired nibbles from both the Shires.
Home pressed John Penny ham hocks, leek and Swaledale mature cheddar with celeriac remoulade filled Yorkshire puddings and a delicious homemade shallot jam.
Pressed herb fed, free range chicken and Bury black pudding with piccalilli puree, confit of free range egg yolk and home cured smoked bacon bits.
Holme Farm venison Wellington with pickled walnuts, braised red wine celery, beetroot Dauphinoise and a rich Pontefract cake sauce.
Trough of Albion Farm loin of lamb with caramelised braised fennel, buttery fondant potatoes, roast carrot puree, crispy onions and a balsamic lamb jus reduction.
Tomlinson’s forced textures of rhubarb with glazed vanilla custard.
Caramelised apple Chorley cake, with Mrs Kirkham’s cheese arctic roll, and a salted caramel sauce.
